- 1 spaghetti squash
- 2 cups cremini mushrooms, sliced
- 3 cloves garlic, minced
- 2 tablespoons fresh thyme
- 2 tablespoons fresh parsley, chopped
- 1 cup Gruyère cheese, shredded
- ½ cup Parmesan cheese, grated
- 2 tablespoons butter
- ½ cup milk or cream
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the spaghetti squash in half lengthwise and scoop out the seeds. Brush with melted butter, season with salt and pepper, and roast cut-side down on a baking sheet lined with parchment paper for 40–50 minutes until fork-tender.
- In a skillet, melt butter over medium heat. Add sliced mushrooms and sauté until brown, approximately 5-7 minutes. Add minced garlic and cook for another minute until fragrant.
- After the squash has cooled, scrape the strands into a bowl and mix with the sautéed mushrooms, herbs, cheese, and milk.
- Transfer the mixture to a greased baking dish, top with additional cheese, and bake for 25–30 minutes until bubbly and golden.
- Let it cool for a few minutes before serving to help it hold its shape.
Notes
Experiment with different cheeses or add leftover vegetables like zucchini or spinach for added flavor and texture.
