Ingredients

  • 1 spaghetti squash
  • 2 cups cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons fresh thyme
  • 2 tablespoons fresh parsley, chopped
  • 1 cup Gruyère cheese, shredded
  • ½ cup Parmesan cheese, grated
  • 2 tablespoons butter
  • ½ cup milk or cream
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds. Brush with melted butter, season with salt and pepper, and roast cut-side down on a baking sheet lined with parchment paper for 40–50 minutes until fork-tender.
  3. In a skillet, melt butter over medium heat. Add sliced mushrooms and sauté until brown, approximately 5-7 minutes. Add minced garlic and cook for another minute until fragrant.
  4. After the squash has cooled, scrape the strands into a bowl and mix with the sautéed mushrooms, herbs, cheese, and milk.
  5. Transfer the mixture to a greased baking dish, top with additional cheese, and bake for 25–30 minutes until bubbly and golden.
  6. Let it cool for a few minutes before serving to help it hold its shape.

Notes

Experiment with different cheeses or add leftover vegetables like zucchini or spinach for added flavor and texture.
