Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 tablespoon tomato paste
  • 1 teaspoon smoked paprika
  • 4 cups vegetable or chicken broth
  • 2 tablespoons olive oil
  • Fresh thyme, chopped
  • Fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add onions, garlic, and bell peppers; sauté for 5-7 minutes until softened.
  2. Add sliced chorizo and cook until browned, about 5 minutes.
  3. Stir in tomato paste, smoked paprika, salt, and pepper; cook for 2 minutes.
  4. Add chickpeas and broth, stirring to combine.
  5. Bring to a boil, then reduce heat and simmer for 20-30 minutes until thickened.
  6. Stir in fresh herbs before serving. Adjust seasoning if necessary.
  7. Serve warm with crusty bread or over rice.

Notes

You can substitute Italian sausage for chorizo or add lentils for a fun texture shift. Smoked paprika is key for that Spanish flavor.
