- 1 lb chorizo, sliced
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 tablespoon tomato paste
- 1 teaspoon smoked paprika
- 4 cups vegetable or chicken broth
- 2 tablespoons olive oil
- Fresh thyme, chopped
- Fresh parsley, chopped
- Salt and pepper to taste
Instructions
- In a large pot or Dutch oven, heat olive oil over medium heat. Add onions, garlic, and bell peppers; sauté for 5-7 minutes until softened.
- Add sliced chorizo and cook until browned, about 5 minutes.
- Stir in tomato paste, smoked paprika, salt, and pepper; cook for 2 minutes.
- Add chickpeas and broth, stirring to combine.
- Bring to a boil, then reduce heat and simmer for 20-30 minutes until thickened.
- Stir in fresh herbs before serving. Adjust seasoning if necessary.
- Serve warm with crusty bread or over rice.
Notes
You can substitute Italian sausage for chorizo or add lentils for a fun texture shift. Smoked paprika is key for that Spanish flavor.
