- 1 can (400g) diced tomatoes
- 4 cups vegetable or chicken broth
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- 2 bay leaves
- Salt and pepper to taste
- 2 cups greens (spinach, kale, or zucchini)
- Fresh parsley or cilantro for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add diced onions and bell peppers, stirring until softened—about 5 minutes. Add minced garlic and sauté for another minute until fragrant.
- Slice the chorizo into rounds, then add it to the pot. Cook until browned, allowing the oil and spices to infuse the broth.
- Stir in drained chickpeas and canned tomatoes, ensuring everything is well mixed.
- Add smoked paprika, cumin, bay leaves, salt, and pepper. Let the mixture simmer for a few minutes.
- Pour in broth, ensuring there’s enough to cover the chickpeas and chorizo. Bring to a gentle boil, then reduce heat to low and cover.
- Let your stew simmer for 20-30 minutes, stirring occasionally.
- Stir in your greens during the last five minutes cooking until wilted.
- Ladle the stew into bowls and garnish with fresh parsley or cilantro, serving with crusty bread.
