  • 1/2 cup sweetener (coconut sugar or brown sugar)
  • 2 large eggs
  • 1 tsp ground cinnamon

  • 1/2 tsp ground ginger
  • 1/2 cup butter or coconut oil (melted)
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish or line it with parchment paper.
  2. In a bowl, whisk together gluten-free flour blend, spices, and salt.
  3. In another bowl, combine pumpkin puree, eggs, and sweetener, and blend until smooth.
  4. Gradually add dry mixture to wet ingredients and fold gently until just combined.
  5. Melt the butter or coconut oil and fold it into the batter.
  6. Pour the batter into the baking dish, smoothing it out evenly.
  7. Bake for 25–30 minutes or until a toothpick inserted comes out clean.
  8. Allow the bars to cool completely before slicing and serving.
