- 1 cup gluten-free flour blend
- 1/2 cup sweetener (coconut sugar or brown sugar)
- 2 large eggs
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp ground ginger
- 1/2 cup butter or coconut oil (melted)
- 1/4 tsp salt
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish or line it with parchment paper.
- In a bowl, whisk together gluten-free flour blend, spices, and salt.
- In another bowl, combine pumpkin puree, eggs, and sweetener, and blend until smooth.
- Gradually add dry mixture to wet ingredients and fold gently until just combined.
- Melt the butter or coconut oil and fold it into the batter.
- Pour the batter into the baking dish, smoothing it out evenly.
- Bake for 25–30 minutes or until a toothpick inserted comes out clean.
- Allow the bars to cool completely before slicing and serving.
Notes
Serve with powdered sugar or whipped cream. These bars can also be frozen for later enjoyment.
