- 1 ½ cups graham cracker crumbs
- ½ cup granulated sugar
- ½ cup unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs, room temperature
- 1 tsp vanilla extract
- 2 cups fresh strawberries, pureed
Instructions
- Preheat your oven to 325°F (160°C).
- In a bowl, combine crushed graham crackers and sugar, then stir in melted butter until it resembles wet sand. Press this mixture into the bottom of a 9-inch springform pan and bake for 10 minutes to set. Let it cool.
- In a large mixing bowl, beat the cream cheese until smooth. Gradually add in 1 cup sugar, then add the eggs one at a time, mixing on low. Add vanilla extract.
- Puree the strawberries in a blender until smooth.
- Pour half of the cheesecake batter into the prepared crust, dollop half of the strawberry puree on top, and swirl carefully with a knife. Repeat with the remaining batter and puree.
- Bake for about 50-60 minutes, until set around the edges but slightly jiggly in the center.
- Turn off the oven and let the cheesecake cool slowly with the oven door ajar for about an hour. Refrigerate for at least 4 hours, preferably overnight.
- Gently remove the springform pan, slice, and serve.

Ensure all ingredients are at room temperature for a smoother batter. Avoid opening the oven door too often while baking.
