- 2 cups rolled oats
- 1 tsp baking powder
- 1 tsp cinnamon
- 8 oz cream cheese
- 1 cup milk (whole, almond, or oat)
- 2 large eggs
- 1/4 cup maple syrup or honey
- 2 cups strawberries (fresh or frozen)
Instructions
- Preheat your oven to 375°F (190°C).
- Grease a medium baking dish with butter or nonstick spray.
- In a large bowl, combine the rolled oats, baking powder, and cinnamon. Stir until well incorporated.
- In another bowl, beat the cream cheese until smooth. Add in the milk, eggs, and sweetener. Mix until creamy.
- Gently fold the creamy mixture into the dry ingredients without overmixing.
- Fold in the strawberries until well-distributed.
- Transfer the mixture into your prepared baking dish and bake for 30-35 minutes until the top is set and lightly golden.
- Allow to cool for a few minutes before slicing. Serve warm or store in the fridge for later.
- Optional: Garnish with whipped cream or extra strawberries.
