  • 2 large eggs
  • 8 oz cream cheese, softened
  • 1 cup fresh strawberries, chopped (or substitute with other berries)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Line a muffin tin with paper liners or grease it lightly with cooking spray.
  3. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  4. In a separate bowl, beat the eggs and mix in the softened cream cheese until smooth.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Gently fold in the chopped strawberries.
  7. Spoon the batter into the muffin compartments about two-thirds full.
  8. Bake for 18-20 minutes, or until golden brown and a toothpick comes out clean.
  9. Allow to cool slightly before transferring to a wire rack.
