- 1 cup granulated sugar (or brown sugar)
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 8 oz cream cheese, softened
- 1 cup fresh strawberries, chopped (or substitute with other berries)
Instructions
- Preheat the oven to 375°F (190°C).
- Line a muffin tin with paper liners or grease it lightly with cooking spray.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, beat the eggs and mix in the softened cream cheese until smooth.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Gently fold in the chopped strawberries.
- Spoon the batter into the muffin compartments about two-thirds full.
- Bake for 18-20 minutes, or until golden brown and a toothpick comes out clean.
- Allow to cool slightly before transferring to a wire rack.
- Serve warm, possibly with butter or honey.
Notes
For best results, use room temperature ingredients. Avoid overmixing the batter to prevent dense muffins.
