Description

Deliciously soft muffins filled with fresh strawberries and creamy cheese, perfect for breakfast or a snack.


Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 8 oz cream cheese, softened
  • 2 large eggs
  • 1/2 cup milk
  • 1 cup fresh strawberries, chopped

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the cream cheese and continue mixing until combined, scraping down the sides as needed.
  4. Beat in the eggs, one at a time, followed by the milk, mixing until smooth.
  5. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  6. Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
  7. Fold in chopped strawberries gently.
  8. Spoon the batter into the prepared muffin tin, filling each cavity about two-thirds full.
  9. Bake for 18–20 minutes or until a toothpick inserted comes out clean.
  10. Let cool slightly in the pan before transferring to a wire rack to cool completely.

Notes

For an added touch, sprinkle coarse sugar on top before baking for extra crunch.
