Deliciously soft muffins filled with fresh strawberries and creamy cheese, perfect for breakfast or a snack.
Ingredients

- 2 cups all-purpose flour
- 3/4 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 8 oz cream cheese, softened
- 2 large eggs
- 1/2 cup milk
- 1 cup fresh strawberries, chopped
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the cream cheese and continue mixing until combined, scraping down the sides as needed.
- Beat in the eggs, one at a time, followed by the milk, mixing until smooth.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
- Fold in chopped strawberries gently.
- Spoon the batter into the prepared muffin tin, filling each cavity about two-thirds full.
- Bake for 18–20 minutes or until a toothpick inserted comes out clean.
- Let cool slightly in the pan before transferring to a wire rack to cool completely.
Notes
For an added touch, sprinkle coarse sugar on top before baking for extra crunch.
