Ingredients

- 2 cups fresh strawberries, sliced
- 1 cup all-purpose flour
- ½ cup rolled oats
- ½ cup granulated sugar
- ½ teaspoon baking powder
- ½ cup unsalted butter, melted
- 2 tablespoons granulated sugar (for strawberries)
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×9-inch square baking pan, or line it with parchment paper for easy removal.
- In a mixing bowl, combine 1 cup of flour, oats, ½ cup of sugar, and baking powder. Stir well.
- Add melted butter to the flour mixture and mix until it resembles coarse crumbs.
- Reserve about 1 cup of the crumble mixture, then press the remaining mixture into the bottom of the prepared pan to create a crust.
- In another bowl, toss the sliced strawberries with 2 tablespoons of sugar and vanilla extract. Let sit for about 10 minutes.
- Spread the macerated strawberries over the crust.
- Crumble the reserved topping evenly over the strawberries.
- Bake for about 30-35 minutes or until the topping is golden brown and the strawberries are bubbling.
- Allow to cool before slicing into bars. Serve warm or at room temperature.
Notes
Use ripe strawberries for the best flavor. Let the bars cool completely in the pan for perfect slices.
