- 2 ¾ cups all-purpose flour
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- Pinch of salt
- 1 teaspoon strawberry preserves or fresh strawberry compote
- 4 ounces cream cheese, softened
- 2 cups powdered sugar
- Milk, for icing
- Melted butter, for brushing on cookies before baking
Instructions
- Preheat your oven to 350°F (175°C). In a bowl, cream together the softened butter and granulated sugar until light and fluffy. Mix in the egg and vanilla extract.
- Gradually add in the flour and a pinch of salt, mixing until a dough forms.
- Roll out the dough on a floured surface to about ¼ inch thick and cut out shapes. Place a teaspoon of strawberry preserves in the center of half the shapes.
- Cover with another cookie shape, press the edges to seal with a fork, and brush with melted butter.
- Bake on a baking sheet for about 12-15 minutes, or until golden brown.
- While cooling, whisk together softened cream cheese, powdered sugar, and a splash of milk. Drizzle icing over the cooled cookies and let set before serving.
Notes
For a vegan option, substitute butter with coconut oil or vegan butter, and replace the egg with a flaxseed meal mixed with water. Store leftover cookies in an airtight container at room temperature or freeze for later enjoyment.
