Ingredients

  • 1 lb ground turkey
  • 1 cup dried cranberries
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup bread crumbs
  • 1 large egg
  • 1/4 cup fresh parsley, chopped
  • 1 tsp fresh thyme
  • 1 tbsp Worcestershire sauce
  • Salt and pepper to taste
  • 3 tbsp butter (for gravy)
  • 3 tbsp flour (for gravy)
  • 2 cups chicken or vegetable stock (for gravy)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
  2. Finely chop the onions and mince the garlic. Sauté them in a drizzle of olive oil over medium heat until softened, then set aside.
  3. In a large mixing bowl, combine ground turkey, sautéed onions and garlic, dried cranberries, bread crumbs, egg, parsley, thyme, Worcestershire sauce, salt, and pepper. Mix gently until just combined.
  4. Transfer the mixture to the prepared loaf pan and shape it into a loaf.
  5. Bake for about 60 minutes until the internal temperature reaches 165°F (75°C).
  6. While the meatloaf bakes, melt butter in a saucepan, whisk in flour to create a roux, add stock gradually, and cook until thickened. Season with salt and pepper.
  7. Allow the meatloaf to rest for 10 minutes before slicing. Serve topped with gravy.

Notes

For a different flavor, try using fresh cranberries and adjust sweetness or use ground chicken for variation. Leftovers make great sandwiches.
