- 1 lb ground turkey
- 1 cup dried cranberries
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup bread crumbs
- 1 large egg
- 1/4 cup fresh parsley, chopped
- 1 tsp fresh thyme
- 1 tbsp Worcestershire sauce
- Salt and pepper to taste
- 3 tbsp butter (for gravy)
- 3 tbsp flour (for gravy)
- 2 cups chicken or vegetable stock (for gravy)
Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
- Finely chop the onions and mince the garlic. Sauté them in a drizzle of olive oil over medium heat until softened, then set aside.
- In a large mixing bowl, combine ground turkey, sautéed onions and garlic, dried cranberries, bread crumbs, egg, parsley, thyme, Worcestershire sauce, salt, and pepper. Mix gently until just combined.
- Transfer the mixture to the prepared loaf pan and shape it into a loaf.
- Bake for about 60 minutes until the internal temperature reaches 165°F (75°C).
- While the meatloaf bakes, melt butter in a saucepan, whisk in flour to create a roux, add stock gradually, and cook until thickened. Season with salt and pepper.
- Allow the meatloaf to rest for 10 minutes before slicing. Serve topped with gravy.
Notes
For a different flavor, try using fresh cranberries and adjust sweetness or use ground chicken for variation. Leftovers make great sandwiches.
